Spam mutsubi bowls

Spam, the evil canned meat (or meat-like product) gets turned into a still extremely salty, but also very delicious treat in this meal! A Japanese-inspired glow up for a much maligned product, that I would not want to eat without significant flavor (and smell) alterations. Onsen eggs are added to this meal, which are a special egg product, where the eggs are cooked at the low temperature of hot springs. The egg whites become creamy instead of solid, and the egg yolks also cook through, and become partly solidified. 

Ingredients

1 can of spam

2 tbsp soy sauce

1 tbsp brown sugar

2 tbsp mirin

4 servings of sushi rice

sheets of nori

4 onsen eggs

scallions if desired

Preparation

Dice the spam into 0.5-inch cubes. Brown in a hot pan until all sides are browned. Add in the mixture of soy sauce, sugar, and mirin. Cook for another few minutes, until the sauce thickens onto the spam pieces.

Dish up four bowls of sushi rice. Top them with the spam, shredded nori sheets, one onsen egg, and thin-sliced scallions. Serve!
