Sushi rice

I've been enjoying vegan sushi, filled with roasted sweet potato wedges, avocados, and the latest version: marinated roasted bell pepper strips. Absolutely delicious. I had to invest in a sushi roller, proper sushi rice, rice vinegar, and nori sheets. Also wasabi! But it is totally worth it.

Ingredients

2 cups shushi rice

water

1/3 cup rice vinegar

1.5 tbsp sugar

1 tsp salt

Preparation

Rinse the rice until water runs clear.

Soak in 2.5 cups of water for 30 minutes.

Bring to a boil and cook for 10 minutes, stirring once halfway.

Remove from heat and allow to rest, covered, for 15 minutes. 

Dissolve salt and sugar in rice vinegar and hot liquid onto hot rice. "Cut in" carefully and distribute rice onto a baking sheet. Place in front of a fan for 10-15 minutes, then roll your sushi!
