Coconut cream pie

This is an amazing version of one of my favorites. I'm not a huge fan of pies, except for cream pies with custard creams. Coconut is also one of my favorite flavors all time!

Ingredients

1 9-inch pie crust

1 cup sweetened, shredded coconut

1/3 cup starch

0.5 cup sugar

1 15 oz can coconut milk

about 1.5 cup heavy cream to bring liquids to 3 cups total

2 tsp vanilla extract

2 eggs

0.25 tsp salt

Preparation

Mix the starch with the sugar and salt. Whisk in the eggs.

Add in the cream and coconut cream little by little. 

Bring to a boil over medium-high heat. Simmer until thickened. Mix in most of the coconut flakes and the vanilla.

Pour into pre-baked pie crust, cover and plastic foil and chill completely in the fridge.

Top with whipped cream and toasted coconut flakes if desired.
