Apple pastry

This was quite tasty and in the future I will have to try it with cream cheese-strawberry, blueberry and apricot filling as well. I baked some of these on aluminum foil, due to lack of space on my baking sheet. Interestingly, on aluminum foil the bottom of the pastry didn't brown nearly as well.

Ingredients
300g flour
55g sugar
pinch of salt
2 tsp yeast
0.5 egg (this is tricky :-)
150mL milk
30g butter
0.5 tsp vanilla
filling

Preparation
Mix dry and wet ingredients in separate bowls, except butter, combine and knead until smooth. Cut in butter and knead for 5-10 minutes.

Coat with a little bit of oil and allow to rise for 60 minutes, or until double in size.

Punch down and cut into 6 pieces. Shape into balls and roll out each into 6x7 inch rectangles.

Slice in the bottom third as shown on the picture, then place the filling in the middle third.

Fold uncut piece over filling, then fold the filling over the sliced bits. Place onto a baking shape cut-side-up.

Brush lightly with oil and cover with foil. Allow to double again.

Bake in a preheated 375F oven for ~10-15 minutes. Remove onto cookie rack, brush with unsalted butter and sprinkle with sugar. Serve!
