Apple pastry filling

Next time I will add more cinnamon and some ground walnuts to this.

2 Garry Smith apples, not ripe
0.25 cup brown sugar
0.125 tsp salt
0.25 tsp cinnamon
55+20mL water
0.5 tbsp butter
1 tsp lemon juice
2 tbsp starch

Peel and core the apples. Slice them into thin slices, then chop them into 0.5 inch pieces.

To a small pot add the sugar, apples, lemon juice, salt, cinnamon and 55mL water. Bring to a boil and simmer for a few minutes. Meanwhile, mix the starch in 20mL water.

Add the starchy mixture to the apples, stir until it thickens. This happens very quickly.

Remove from the heat and stir in the butter. Allow to cool.
