When you have an abundance of zucchini, and everyone in the family is fed up even hearing the name of the vegetable: this is your go-to easy meal!
Ingredients
1 large zucchini
1 large yellow onion
garlic powder
paprika
salt
corn meal
flour
parmesan cheese
Preparation
Slice the zucchini thinly on a mandolin. Salt and set side to release juices.
Line a sheet pan with parchment paper. Drizzle or spray with oil lightly. Preheat oven to 425F.
Squeeze out the zucchini and mix in the thinly-sliced onion. Mix in spices to taste (I like garlic powder, paprika, black pepper), and add in a handful of corn meal (not flour), a quarter cup of shredded parmesan, and a quarter cup of flour.
Mix well and spread onto oiled baking sheet. Spray the top lightly with oil and bake in a preheated 425F oven until nice and crispy! Serve as a side, or a sandwich filler.
