Mushroom stroganoff

A tangy, flavorful vegetarian dish, that is perfect for mushroom lovers. Served over farfalle pasta, it makes a quick and fancy dish!

Ingredients

24 oz button mushrooms

1 yellow onion

4-5 cloves of garlic

1 cup sour cream

1 tbsp flour

1 cup broth

1 tbsp mustard

0.5 tsp pepper flakes

1 tbsp butter

Preparation

Slice the mushrooms into thin slices. Brown in butter with a pinch of salt. Remove onto a plate when well-browned.

Mince the onion and sauté until caramelized in the same pan. Add a little more butter, if your pan became dry to perform this step.

When the onions are done, add the crushed garlic cloves, mustard, pepper flakes, and the mushrooms. Wilt in any chopped spinach if desired. Mix in the flour and cook for a minute or two.

Add in the cold broth and the sour cream.

Adjust seasoning with salt and black pepper (and more mustard, if you wish more of a kick to the flavor).

Serve over pasta, sprinkle with parmesan if desired.
