I love American sugar cookies underbaked. When they are basically lightly warmed up cookie dough with an intense vanilla flavor! Alas, I don't like eating that much sugar for health reasons...so this alternative recipe is perfect for a treat. I even purchased natural food coloring (extracted from spices and beets and such) to be able to frost it!
Ingredients
200g flour
80g sugar
1 tbsp vanilla sugar
pinch of salt
6 tbsp butter
1 egg
heavy cream or sour cream for assembling
Preparation
Mix the flour, sugar, vanilla sugar, and salt.
Add in the egg whisked with the melted butter. Mix by hand, and add heavy cream or sour cream to assemble the dough into a firm but not dry cookie dough.
Wrap and refrigerate for 2-3 hours. Roll out on a lightly floured surface and cut shapes.
Bake in a preheated 350F oven until just set, and edges on the bottom are beginning to turn golden. Do not overbake! Baking time will depend heavily on the thickness of the cookies you rolled! I start to check after 8 minutes.
Frost with icing sugar mixed with tiny bits of milk or lemon juice (as desired).
