Hungarian cherry pie

I got a jar of sour cherries from Aldi, and wanted to turn it into this comfort food from Hungary. It turned out absolutely delicious! Did you know Hungary is famous for its shortbread? The recipes even make it into Julia Child's baking book!

Ingredients

250g flour

1.5 tsp baking powder

0.25 tsp salt

75g sugar

75g butter

1 egg

90-100g sour cream

1 lb sour cherries, pitted and drained of juices

Preparation

Butter and flour a 10-inch ceramic pie shape.

Set the sour cherry compote to drain in a sieve.

Soften the butter. Mix the four with the sugar, salt, and baking powder. Add the softened butter, egg (minus a tsp of yolk for egg wash), and sour cream. 

Work the dough together and cut into two pieces, one of them a little bit bigger than the other.

Roll out the bigger dough ball and place into the pie shape. Spread the sour cherries on top, sprinkle with 0.5 tsp cinnamon and 1-2 tbsp semolina (these are optional).

Roll out the smaller dough ball and place it on the top. Crimp the edges together. Cut a slit at the top and brush the top with egg wash.

Bake until golden brown in a 350F oven (about 30 minutes).
