Lefse

This Norwegian potato flatbread is so delicious, soft...it's like a delicious potato pancake. I like to serve it with butter, sugar, and cinnamon.

Ingredients

2/3 lb peeled potatoes

2 tbsp butter

3 tbsp heavy cream

0.5 tsp salt

0.25 cup flour

Preparation

Cook the diced potatoes until tender, then pour off the water and allow to dry.

Rice the potatoes and mix in the butter. Refrigerate until cold, for about an hour.

Mix in the flour, cream, and salt. Divide into 2-4 balls. Roll out and cook in a hot nonstick pan. Serve warm!
