A delicious and super nutritious vegan meal. Sweet potatoes are incredible. Not only are they filled with nutrients, they are also absolutely delicious. A natural treat. Here they are combined with some chickpeas for increased protein content.
Ingredients
4 slow-roasted sweet potatoes
15 oz canned diced tomatoes
15 oz canned chickpeas
one yellow onion
2 tbsp butter
1 tsp curry powder
salt
pepper
Preparation
Roast the sweet potatoes until tender at 320F. Takes about 1-2hours.
Peel the skin of the sweet potatoes, place each on its own plate and cut in half.
Sautee the diced onion on the butter until nicely caramelized. Add the curry powder and the tomatoes and chickpeas. Simmer for 20 minutes. Season with salt and pepper.
Top sweet potatoes with the filling distributed evenly.
