Cheddar biscuits


Hungarians and Americans both seem to love biscuits. Pogacsa, or sajtos pogacsa, specifically, frequently features as a quick breakfast in Hungarian cuisine. In the US they are also served, but not by themselves, rather turned into sandwiches with eggs, bacon, sausages.

These are amazing: and key to it is plenty of cold butter!

Ingredients

1 cup flour

1 tsp baking powder

0.5 tsp sugar

1 tsp garlic powder

0.25 tsp salt

0.25 tsp black pepper

4 tbsp unsalted butter

0.25 cup pluys 2 tbsp milk mixed with 1 tsp vinegar

1 cup grated cheddar cheese

Preparation

Mix the dry ingredients.

Mix the milk with the vinegar.

Cut the cold butter into the flour mix. Sprinkle in cheese and work in evenly.

Mix in milk and vinegar mix and bring the dough together.

Roll out on a floured surface and fold into thirds. Refrigerate for an hour.

Preheat oven to 425F. Roll out the dough to about 1-inch thick. Cut into four equal pieces with a super-sharp knife.

Place onto cookie sheet, about 0.5-inch from each other. Freeze for 20 minutes. Brush top with buttermilk.

Bake for about 15 minutes, until light brown on top!
