Smashed potatoes

These are yet another delicious way to prepare potatoes, my favorite sources of starch right after bread products! Small potatoes are the best for this recipe.

Ingredients

1.5 lb small potatoes

1 tbsp salt

2 tbsp butter

1 tbsp olive oil

salt

black pepper

Preparation

Cook the potatoes in salted water for 20-30 minutes (until soft).

Preheat oven to 400F.

Drain the potatoes and allow them to sit in the pot to dry for a few minutes.

Smash them onto a parchment-lined baking sheet with the bottom of a glass bowl. Make sure it is a flat bottom!

Allow to dry again, then brush with oil and butter.

Season with salt and pepper and bake for 45-55 minutes, until edges are crispy. Serve topped with minced chives!
