Ingredients
2 tbsp vegetable oil
5 cloves garlic
20 oz fresh tomatoes
1 tsp Italian seasoning
1 tsp oregano
1 tsp salt
1 tsp black pepper
2 cans (30oz total) rinsed white beans
1 jalapeno
water
2 oz parmesan
Preparation
Sautee the minced jalapeno and crushed garlic in the oil for a minute. Don't burn it! Add the spices, diced tomatoes, beans. Simmer for 20 minutes, until tomatoes break down into a tomato sauce.
Add water as needed, to ensure the dish remains a little saucy. Adjust sweetness if desired, with a tiny pinch of sugar.
Fold in shredded Parmesan until melted. Sprinkle mozzarella on top and bake until top is melted (about 10-20 minutes in a 350F oven). Broil briefly at the end, for a browning of the cheesy crust. Serve with bread while warm!
