No-yeast Belgian waffle batter

I usually make an overnight yeast dough for Belgian waffles, but this was a quick and easy vegan substitute that ended up being fluffy and perfect topped with maple syrup and fruit!

Ingredients

2 cups flour

3 tbsp sugar

2 tsp baking powder

0.5 tsp salt

1 egg

1.75-2 cups milk

1/3 cup vegetable oil

1 tsp vanilla extract

Preparation

Sift the dry ingredients together.

Whisk the wet ingredients together. Blend into dry ingredients once the waffle iron is preheated. Add more milk if the dough is too dry, it should be a little liquidy.

Cook until golden brown, then serve with the usual toppings!
