Crispy stir-fried tofu

I was never a huge fan of tofu: do not love the texture, and it doesn't have much of a flavor. It turns out, tofu is delicious when appropriately prepared! This recipe  makes flavorful little tofu cubes perfect for topping rice or hot pot noodles with.

Ingredients

1 lb extra firm tofu

2-3 tbsp flour

2 tbsp soy sauce

1 tbsp Sriracha

0.5 tbsp grated ginger (or 0.25 tsp ground dry ginger)

0.5 tsp maple syrup

2 cloves of garlic (or 0.5 tsp garlic powder)

2 tbsp vegetable oil

Preparation

Really, the only key ingredients are the tofu, flour, oil, and soy sauce.

Press the tofu in a tofu press for several hours, until the juices are squeezed out. 

Heat the oil in a large skillet on high heat.

Cut the tofu into 0.5-inch cubes and pat dry with a paper towel. Toss with the flour/starch. Add to the hot oil.

Do not stir immediately, allow the sides to brown between stirring steps.

Mix the soy sauce with the Sriracha, maple syrup, ginger, and garlic. Add 1-2 tbps water and 1 tbsp flour.

When each side of the pieces is browned, add the sauce and lower the heat. Coat the pieces in sauce and evaporate the sauce off until it stick to the tofu chunks. Do not burn!
