Vegan Hungarian sausage

Since the children have switched us over to a predominantly vegan diet, I've been trying to convert some foods that I enjoy to vegan alternatives. I generally tend to think that vegans get the best results if they try to avoid imitating meat-based dishes. But sometimes you are just craving something...nutritionally, this sausage is nothing like meat sausage. But the taste was pretty good, and it fulfilled the "feeling".

Ingredients

0.5 cup cooked brown rice

0.5 cup rehydrated soy protein

1 cup oat meal

1.25 cup water

0.25 cup oat flour

1 tsp vegetable oil

salt

black pepper

1 tsp paprika

0.5 tsp garlic powder

0.5 tsp ground caraway seeds

ketchup

Preparation

Preheat oven to 400F. Line a baking sheet with parchment paper.

Boil the water and add the oil, spices, and the oat flour and at meal. Mix well. Cook for 2-3 minutes, then fold in the soy protein and brown rice.

Shape into 0.5-inch-diameter sausages. Place onto baking sheet. 

Bake for 15-20 minutes, brushed with ketchup for color. Allow to cool completely and allow them to sit for several hours before searing and serving.
