Frangipane gallette


I love almond flavor. Frangipane, marzipane, all things almondy are some of my favorite foods in the world. This simple gallette brings the flavor, topped with a fruit of your choice!

Ingredients

one 9-inch pie crust

0.75 cup almond flour

3 tbsp sugar

salt

3 tbsp butter

1 egg

0.5 tsp almond extract

0.5 tsp vanilla extract

more butter and coarse sugar

Preparation

Roll out the pie crust to 10-11 inches. Place onto baking sheet.

Preheat oven to 400F.

In a food processor, process the almond flour, melted butter, large egg, pinch of salt, and the extracts until smooth.

Spoon onto pie crust. Spread out to about an inch from the edges.

Top with your fruit: thin-sliced apples, cherries, peaches, pears, etc...

Brush edges with melted butter. Sprinkle with sparkling sugar.

Bake for 35 minutes, until golden brown.

Brush with heated jam, if you wish!
