Blueberry oatmeal cake


This is somewhere between a cake and baked oatmeal. It all depends on how finely you powder the oats. The taste is definitely excellent, but it will not necessarily have a cake-like consistency if your oats are roughly chopped.

Ingredients

0.75 cup milk

2 tbsp lemon juice

1 tbsp lemon zest

0.25 cup apple sauce

1 tsp vanilla

270g oats

0.25 cup sugar

2 tsp baking powder

0.5 tsp baking soda

1 cup blueberries

Preparation

Reserve a third of the blueberries.

Line a 9-inch springform pan with parchment paper and lightly oil.

Mix the milk with the lemon juice.

Preheat oven to 350F.

Pulse oats in a food processor until finely ground. Whisk dry ingredients. Fold in wet ingredients just until no dry spots remain.

Fold in the larger portion of blueberries. Pour into baking shape. Place the rest of the blueberries on top.

Bake for 30 minutes, until center is set. 

Dust with powdered sugar before serving.
