In the summer months, when zucchini abounds, this recipe comes in handy! Everyone loved it, because everyone loves pizza.
Ingredients
pizza dough from 3 cups of flour
olive oil
2.5 lb zucchini
3 cloves garlic
1.5 tsp salt
8 oz Swiss cheese
2 tbsp breadcrumbs
Preparation
Heat the oven to 500F. Line a half-sheetpan with parchment paper, brush with oil.
Press pizza dough out to the edges.
Salt the zucchini, then after 15 minutes squeeze out all the juice you can!
Mix the zucchini with crushed garlic cloves and the shredded swiss cheese. Spread onto pizza dough.
Season with pepper, salt, and sprinkle with breadcrumbs.
Bake until top is golden brown!
