Potato pizza

I managed to grow some potatoes in haybales. It was an interesting experiment, and I learned of a significant drawback of the haybale method: mice have easy access to the potatoes. So do voles. And it turns out they enjoy them as much as we do.

Well, I still managed to harvest a few pounds, and made this potato pizza of a portion of them!

Ingredients

4 tsp salt

6-8 medium potatoes

1 large onion

0.5 tsp black pepper

1 tbsp fresh rosemary

4 tbsp olive oil

pizza dough from 3 cups of flour

Preparation

Dissolve the salt in 1 quart water. Slice the potatoes very thinly, maybe with a vegetable peeler or mandolin. Add to the salted water and allow to soak for a few hours (or at minimum half an hour).

Heat the oven to 500F. Stretch out the pizza dough and pat the potatoes dry after draining.

Toss the potatoes with minced onion, black pepper, and olive oil. Spread the potato slices onto the pizza.

Sprinkle with rosemary and bake for 25-30 minutes, until topping starts to turn brown. Optional: sprinkle with shredded parmesan once out of the oven, while still hot.
