A Turkish stuffed flatbread, these can be filled creatively with vegetarian, vegan, and meat options. Very energy dense, these flatbread discs easily make a complete meal!
Ingredients
375g flour
0.25 cup olive oil
0.75 cup water
0.5 tsp salt
filling option:
1 lb rehydrated soy granules
1 tbsp oil
2 cloves garlic
1 yellow onion
2 jalapenos
3 oz soft greens
1.5 tsp cumin
1 tsp paprika
0.5 tsp cayenne
1 tbsp tomato paste
salt
pepper
3 tbsp Feta
Preparation
Mix dough ingredients until it comes together to a soft, pliable dough. Add more water if needed.
Set aside to rest.
Sautee the minced onion, add the garlic, tomato paste, and the spices and cook for a moment. Mix in the soy granules and cook for a few minutes. Wilt in chopped greens if using.
Season with salt and pepper and crumble in the Feta.
Cut dough into 5 pieces. Roll out to be about 10-by-10 inches. Add a fifth of the filling and seal edges. Moisten to make dough sticky if necessary.
Cook both sides until browned in about 1 tbsp vegetable oil in a nonstick skillet.
Serve with yogurt.
