These cookies are a great way to input some fat (butter) and relatively low-sugar carbs (mostly flour) into a little person's diet. My daughter loves these! They are also perfect for lightly frosting with yogurt or other frosting. The egg whites can be used to make some almond cookies for the adults in the household at the same time!
Ingredients
2 egg yolks
40g icing sugar
70g butter
130g flour
0.5 tsp baking powder
pinch of salt
1 tsp vanilla
Preparation
Whisk the egg yolks with the sugar, salt, and vanilla until it becomes pale yellow.
Mix in the softened butter.
Whisk in the flour and baking powder.
Form into a ball and refrigerate for 2-3 hours.
Roll out to quarter-inch-thick, and cut into shapes. bake in a preheated 325F oven until the edges just begin to darken a little. Take out of the oven a cool on a cookie rack.
The longer you bake these, the crisper they will be. If you want softer cookies, take them out before the center is fully set!
