A super simple and vegetable forward soup for the winter.
Ingredients
2 lb broccoli crowns
3-4 large carrots
1 yellow onion
3-4 cloves garlic
pepper flakes
olive oil
salt
black pepper
Preparation
Sautee onion and add garlic. Cook for anothe rminute.
Add broccoli pulled into florets, add carrots. Cook in just enough water to nearly cover until broccoli is tender. Season with salt and black pepper. Blend down with an immersion blender.
Serve the soup with an olive oil drizzle seasoned with pepper flakes (if desired) and crusty bread.
