Soy nuggets

We have been eating these quite frequently, and they are a erfect substitute for chicken nuggets in wraps or for meatballs in sauce or sandwiches. Of course, then you shape them as a ball! Soy provides complete protein, without having to induce the suffering of animals. It's really a lovely solution for the little bit of protein input adult human bodies require! And it is not correlated to colon and intestinal cancer, like red meat consumption is.

Ingredients

1 cup textured soy protein, dry

1 egg

breadcrumbs

half an onion

2 cloves garlic

2-3 tbsp vegetable oil

1 tsp paprika

(other seasonings, as needed for specific dish).

Preparation

Soak the soy protein in boiling water with a pinch of salt for 30 minutes. Squeeze out the liquid and pulse in a food processor to desired fineness.

Add to a bowl and add onion and garlic pureed in food processor. Add spices, egg, oil, and enough breadcrumbs to make the paste easy to shape. Wait after the addition of bits of breadcrumbs, as they swell and absorb liquid!

Preheat oven to 400F. Line a baking sheet with parchment paper and place the shaped balls or nuggets on it.

Bake in the oven for about 10 minutes, then turn and bake for another 10 minutes. Freezer or serve warm! We love these nuggets in homemade flatbread wraps with tzatziki, sriracha, tomatoes, and onions!
