Apple cookies

These dessert bites are somewhere between a cookie and a cake. No the crispy American cookie you may think of. They have a delightful vanilla and apple flavor. They are best served fresh!

Ingredients

1 cup flour

1 egg

0.25 cup sugar

4 tbsp butter

0.25 tsp salt

0.5 tsp baking powder

1 large apple

1 tsp vanilla

icing sugar

Preparation 

Preheat oven to 375F.

Cream the eggs and sugar together. Work in the softened butter and vanilla.

Sift the flour with the salt and baking powder. Mix into the wet ingredients.

Peel and finely-dice the apple. Mix into the dough and form1.5-tbsp balls. Press down a little onto a parchment-lined baking sheet.

Bake for 10-15 minutes, until very light golden colored and center is set.

Dust with icing sugar before serving.
