Hungarian soy porkolt is a delicious, vegetarian stew offering complete protein content. A little extra seasoning overcomes its slightly bland flavor. Excellent served with all the traditional trimmings (pasta, potatoes, fresh pasta).
Ingredients
2 cups soy curls
3 tbsp vegetable oil
2 yellow onions
3 cloves garlic
2 jalapenos
4 tbsp tomato paste
soy sauce
2 tsp Hungarian paprika
1 tsp black pepper
0.25 tsp marjoram
salt
vegetable stock
Preparation
Rehydrate the soy curls by soaking them in boiling vegetable stock. Well, bring the stock to a boil and pour it onto the curls then set aside for an hour.
Using a food processor puree the onions and garlic and peppers.
Sautee the blend in vegetable oil until for 5 minutes. Add the paprika, tomato paste, marjoram, black pepper. Cook for another minute.
Fold in the soy curls after squeezing them out. Add enough fresh vegetable stock to cover.
Simmer for 15 minutes. Adjust seasoning with soy sauce as needed.
For the best outcome, alow to sit for a few hours before reheating and serving.
