Looking for vegetarian substitutes, cauliflower does really well in multiple categories. It is an excellent substitute for chicken in various dishes where the meat simply acts as a flavor carrier. Since I failed to grow cauliflower, but had ample pattypan squash available this year, I tested this recipe with cored, peeled, and diced pattypan squash as well. Works perfectly!
Ingredients
1 large cauliflower
0.5 cup Buffalo hot sauce
4 oz cream cheese
4 oz mozzarella
4 oz blue cheese
crusty bread
oil
salt
Preparation
Dice the cauliflower. Sear on 1-2 tbsp vegetable oil in a preheated, hot skillet. Pour in the hot sauce and remove from the heat. Add the cream cheese in chunks and stir until melted in.
Sprinkle the top with mozzarella. Brown under the broiler. Sprinkle with cold blue cheese. Serve with crusty bread.
