Yes, this one is the best. I love carrot cake enough that carrot cake was one of my wedding cakes. This cake is not overly sweet, very flavorful, moist, and the frosting is sublime!
Ingredients
260g flour
1 tsp baking soda
1 tsp baking powder
0.25 tsp salt
2 tsp cinnamon
1 cup vegetable oil
160g sugar
2 tsp vanilla extract
4 eggs
300g shredded carrots
0.5 cup chopped walnuts
1 cup raisins
frosting:
12 oz cream cheese
2/3 cup powdered sugar
2 tsp vanilla
1/3 cup heavy cream
Preparation
Line two 9-inch pans with parchment paper and grease lightly. Preheat oven to 350F.
Mix the flour. baking powders, cinnamon, salt in a bowl.
Whisk the oil with the sugar. Add the eggs one-by-one and whisk well.
Combine oil mix with flour mix. Fold in the carrots, raisins and nuts. Distribute into two baking shapes.
Bake until center is set. About 20-25 minutes. Allow to cool in pan for 10 minutes.
Remove from pan and allow to cool completely.
Meanwhile, beat the cream cheese until fluffy. Add the sugar and beat until smooth. Add the vanilla and heavy cream and whip until super fluffy. Frost cake and serve!
