Sweet potato and arugula salad

This was a delicious way to use my favorite green: arugula. Arugula splits the crowds, some people love it, others hate it! I am a huge fan, and this year was the first year that I successfully managed to grow Astro arugula in my garden. Delicious!

Ingredients

4-6 large sweet potatoes

3 cups arugula

salt

pepper

olive oil

1 red onion

1 cup red globe radishes

0.25 cup mayo

1 tbsp lemon juice

2 tbsp parmesan

Preparation

Preheat oven to 400F and dice the sweet potatoes into half-inch cubes. Toss with a tbsp of olive oil, salt and black pepper lightly.

Roast for 20 minutes, turn and roast for another 20 minutes until nice and caramelized. Allow to cool.

Shred the arugula, slice the radish, and dice the red onion. Add to a bowl.

Mix the mayo, lemon juice, and parmesan. Toss all with the sweet potatoes and serve!
