Soft almond cookies

I am a huge fan of marzipan and all things flavored with almond extract. It has been one of my favorite flavors all my life. These cookies have amazing texture and a nice, strong almond flavor.

Ingredients

200g almond flour

60g sugar

2 egg whites

0.5 tsp almond extract

0.5 tsp vanilla extract

pinch of salt

icing sugar

Preparation

Preheat oven to 325F.

Mix almond flour and sugar in a bowl. 

Whip egg whites with salt until soft peaks are formed. Blend in extracts.

Stir in the almond flour mixture. Make tablespoon-sized heaps and roll into balls. Place onto baking sheet and press down just a bit.

Bake for 15-20 minutes, do not let them brown. Roll them in icing sugar while warm!
