Cabbage soup with dumplings

A winter treat that can also warm your heart when made with fresh summer cabbage!

Ingredients

1 head of cabbage

16 oz diced tomatoes

2 carrots

1 large onion

2 cloves garlic

1 tbsp smoked Spanish paprika

1 tbsp salt

0.5 tsp cumin

3 tbsp vegetable oil

salt

for the dumplings:

1 cup flour

2 tsp baking powder

1 tsp salt

1 tsp thyme

0.5 tsp black pepper

1 cup milk

Preparation

Shred the cabbage. Dice the onion. Crush the garlic. Peel and slice the carrots into 0.25-inch slices.

Sautee the onion on the oil until softened. Add the crushed garlic and spices and cook for one minute. 

Add the shredded cabbage, carrots, and the tomatoes, and just enough water to cover it. Simmer until the cabbage is softened.

Mix the dry ingredients for the dumplings, the stir in the milk. Allow to sit for about 10 minutes, then cut the dumplings into the simmering soup. Cover with a lid and steam until tender and cooked. Serve warm!
