Irish soda muffins

A new family favorite, these mildly sweet muffins come together very quickly, and are absolutely delicious, especially if you love caraway seeds.

Ingredients

325g flour

2 tsp baking powder

0.25 tsp baking soda

0.25 tsp salt

60g sugar

120g raisins

2 tsp caraway seeds

1 large egg

1 cup and 2tsp buttermilk

67g (or 1/3 cup) vegetable oil

sparkling sugar for sprinkling

Prearation

Preheat oven to 400F.

Line 12 muffin cups with silicone liners.

Mix dry ingredients.

Add in wet ingredients and stir until just combined with no dry spots. Scoop into muffin shapes. Sprinkle tops with sparkling sugar.

Bake for about 20 minutes, until set!

Serve with some good Irish butter.
