We usually make gnocchi using potatoes in Hungary, and serve it as a sweet dish. I had some sweet potatoes at hand, and since I love the flavor of roasted sweet potatoes, I though I would try them as a gnocchi ingredient. They turned out quite well!
Ingredients
2 cups mashed sweet potatoes
2 cups flour
2 tsp salt
Preparation
Roast the sweet potatoes in a preheated 400F oven for about an hour, until easily pierced with a fork.
Run through a potato ricer after peeling (or mash very finely with a fork). Mix the flour with the salt and work it together with the potatoes until mixed. Add more flour to form a soft dough. Do not overwork!
Allow to rest for 15 minutes, then cut into 2-3 pieces and roll each into a 0.5-inch-thick disc. Cut into 0.5-inch strips with a pizza cutter. Roll each a bit and then cut into 1-inch pieces.
Boil in water until pieces float to the top.
A low-gluten flour would be ideal here, if you do not want an overly tough result!
Serve with your favorite toppings. Here presented with cinnamon toasted breadcrumbs and jam. Yumm!
