Cauliflower makhani

Since becoming a vegetarian, this dish has been one of my favorite, extremely satisfying go-to dinners. On a hard work day, having this meal for dinner warms your soul.

Ingredients

1 small/medium head of cauliflower

2 tsp olive oil

2 tsp cumin

1 tsp coriander

3 tbsp butter

1 onion

3 cloves garlic

2 tsp grated ginger

2 tsp garam masala

1 tsp chili powder

1 tsp smoked paprika

28 oz crushed tomatoes

2/3 cup heavy cream

salt, pepper

Preparation

Cut the cauliflower into bite-seize florets. Toss with oil, cumin, 0.5 tsp coriander, salt, black pepper.

Add 1 tbsp butter to a skillet and heat on medium high. Sear the cauliflower on all sides very well! This is a key step for ultimate flavor!

Remove the cauliflower onto a plate. Add the minced onion. Sautee for a few minutes, then add the crushed garlic and grated ginger. Heat for a minute. 

Add in remaining spices and heat for 3-4 minutes, stirring well. Mix in tomato.

Season with salt and pepper and simmer for 5 minutes. Add back cauliflower and simmer for 10 minutes to soften the cauliflower to desired consistency.

Stir in the cream, adjust seasonings, and simmer for 2-3 more minutes. Serve over rice!
