Black bottom cupcakes

I had a package of cream cheese in my fridge. A novelty, after the shortage over winter. I turned them into these cupcakes, and they were devoured with great delight.

Ingredients

8 oz cream cheese

1 egg

0.25 cup sugar

pinch of salt

1 tsp vanilla

1/3 cup mini chocolate chips

cake: 1.5 cup flour

1/3 cup sugar

1/3 cup cocoa powder

1 tsp baking soda

0.25 tsp salt

1/3 cup vegetable oil

1 cup water

1 tbsp vinegar

1 tsp vanilla extract

Preparation

Line a muffin pan with silicone liners. Preheat oven to 350F.

Mix the cream cheese with the sugar and salt. Then beat in the egg and the vanilla. Fold in the chocolate chips.

Mix the dry ingredients for the cake. Mix the wet ingredients in a separate bowl and blend together.

Distribute the chocolate batter into the muffin tins evenly, then add about a tbsp of cream cheese mix to each. Bake for about 20 minutes!
