Hungarian egg noodles with semolina and jam. One of my childhood favorites from the dining hall. It definitely split people, but I used to ask my mom all the time to make this for me. Such a comfort food! It is important to top it with tart, good-quality jam!
Ingredients
200g flour
2 eggs
salty water to assemble noodles
80g semolina
2 tbsp oil
120mL water
salt
icing sugar
jam
Preparation
Mix the flour with the eggs and salty water to assemble into a pliable dough. Do not overwork. Allow to rest for 30 minutes wrapped in foil. Roll out to be paper thin, then cut into strips. Boil until noodles float to the top (not much time needed).
Heat the oil and brown the semolina with a pinch of salt while stirring constantly.
Add in the water and allow it to be absorbed.
Scoop the noodles onto the semolina and stir together.
Serve with icing sugar and ample amounts of jam!
