Enchilada casserole

A quick and easy dinner, very filling, and it appears actually kind of fancy! Delicious with some added roasted veggies as a side.

Ingredients

5 large burrito tortillas

15 oz refried beans

1 cup lentils

1 package taco seasoning

2 cups shredded cheese

1 cup salsa

sour cream

scallions

Preparation

Cook the lentils and drain. Season with taco seasoning.

Preheat oven to 375F.

Start with a tortilla layer and top with half of the refried beans. Drizzle with quarter cup of the salsa. Add the next tortilla layer and top with 0.5 cup cheese and half of the lentils. Repeat these layers again. Top with the fifth tortilla layer, spread on half a cup of salsa and 1 cup of cheese.

Bake in the preheated oven for 30 minutes or so, until the cheese is bubbly.

Cool for 10 minutes, then slice, top with sour cream and chopped scallions. Serve!
