Oat and banana muffins

This is basically muffin-shaped, baked oatmeal. But children seem to enjoy everything muffin-shaped more!

Ingredients

3 ripe bananas

3/4 cup milk

1 tbsp vinegar

0.25 cup maple syrup

1 tsp vanilla

1/3 cup penut butter

3 cups oats

1 tsp cinnamon

2 tsp baking powder

0.5 tsp baking soda

0.25 tsp salt

0.5 cup chocolate chips

Preparation

Line standard muffin cups with silicone liners. Preheat oven to 350F.

In a food processor blend the oats so you get oat flour. Add all the other dry ingredients and blitz together quickly. 

Add the banans and the syrup and blend until bananas are smooth. Add the other ingredients, mixing in the vinegar and chocolate chips last.

Scoop evenly into 12 muffin cups. Bake for about 20-30 minutes, until puffy and center is set!
