Canned salmon is one of my favorite pescatarian ingredients. These quinoa burgers were my favorite salmon cakes so far!
Ingredients
16 oz canned salmon
2 eggs
2 tbsp minced yellow onion
2 tbsp dijon mustard
2 tbsp mayo
1 cup cooked quinoa
salt
black pepper
paprika
Preparation
Mix all the ingredients. Adjust consistency with breadcrumbs and form five large patties.
Heat oil in a skillet and brown both sides of the burgers on medium, until nicely browned and center is well set.
Serve with mashed potatoes and sautéed purple cabbage! (Or on a burger bun!)
