Mudammas

My family's favorite new dish of the year 2021. So simple, delicious, filling, and nutritious!

Ingredients

3 cans white beans

1 can diced tomatoes with juice

5 cloves garlic

0.25-1/3 cup olive oil

2 tsp cumin

0.5 tsp paprika

lemon juice to taste

scallions to serve

Preparation

Sear the drained beans in the olive oil for a few minutes. Add in the crushed garlic, spices, tomatoes with their juice. Cook for another few minutes.

Mash with a potato masher and season with salt. Drizzle with more olive oil if desired. Drizzle with lemon juice and top with chopped parsley, scallions, and diced tomatoes if desired.

Serve with flatbread!
