This is not exactly the typical tabbouleh you will see around. It is a little milder, and easily used as a side dish in larger quantities. It also happily feeds children.
Ingredients
1 cup bulgur wheat
salt
0.25 cup olive oil
2 tbsp lemon juice (to taste realy)
salt
1 seedless cucumber
1 pint cherry tomattoes
0.5 cup minced fresh parsley
1 minced yellow onion
Feta to top
Preparation
Cook the Bulgur in water according to package instructions, until tender. Drain. Add the lemon juice and the olive oil and mix well.
Add the diced tomatoes, onions, cucumber, and parsley mince. Mix well. Season with salt.
Top with crumbled Feta. Serve after it sits just a bit.
