This is like a lasagna, but so simple to put together. Everyone in the family loved it, and it is even better with lentils compared to the meaty recipe.
Ingredients
5 11-inch burrito wraps
15 oz refried beans
1.5 cup lentils cooked
1 packet taco seasoning
1 cup salsa
2 cups shredded cheese
sour cream
scallions
Preparation
Cook the lentils and season with taco seasoning. Set aside.
Lightly oil a large, oven-proof, round pan. Place the first tortilla on it. Spread with 1/2 of the beans, drizzle with salsa, top with 0.5 cup cheese.
Add next tortilla, top with one half of the lentils, add salsa, and 1/2 cup cheese.
Repeat the bean and tortilla layers again. Finish with cheese.
bake in a preheated 350F oven until lightly browned and bubbly.
Cool a bit then slice. Top with sour cream and scallions.
