Egg loaf


When the hens are laying 12 eggs a day, sometimes one resorts to extreme egg dishes. This one is actually quite tasty, and a perfect vegetarian replacement for meatloaf. It is especially tasty after sitting for a few hours!

Ingredients

12 eggs

0.25 cup breadcrumbs

1 small onion

2-4 jalapenos (to taste)

2 tbsp vegetable oil

salt

black pepper

paprika

Preparation

Dice the onion and peppers and soften on a little bit of oil.

Boil 8 of the eggs to hard-boiled. Separate the yolks from the whites and shred the whites. Mash the egg yolks and mix with the sauteed veggies.

Beat the remaining 4 eggs and mix with the mashed egg yolks. Season with salt, black pepper, and 1 tsp paprika.

Combine with the grated egg whites and breadcrumbs.

Butter a 9-by-5-inch glass dish and pour the mixture into it. Bake in a preheated 350F oven until center is just cooked/set. Cool before slicing.
