Caramel apple pudding

This was a fall favorite for the children. Originally prepared by accident, when I forgot to add an egg to a cake. The children loved the puddingy texture more! The caramel sauce on top is crucial!

Ingredients

3 ripe apples

2 cups flour

1.5 tsp baking powder

0.25 cup sugar

1 tsp cinnamon

1/3 cup vegetable oil

water

caramel sauce

Preparation

Peel and shred the apples. Mix apples with oil and cinnamon. Mix flour with sugar and baking powder.

Combine the flour and the apple mix. Add water (or yogurt) until it is somewhat liquidy, like a cake batter.

Preheat oven to 350F. Butter and flour a 9-inch square cake pan. Pour cake mixture into this.

Bake until center is set. Prick top all over with a fork.

Top with caramel sauce while warm. Serve warm.
