Walnuts are a huge favorite for filling pastries in Hungary. They are also very nutritious. Here I'm sharing a simple yet elegant recipe for an apple-walnut pastry.
Ingredients
500g flour
1 tbsp instant yeast
1 egg
0.5 cup yogurt
150mL milk
1/3 cup vegetable oil
3 tbsp sugar
zest of a lemon
pinch of salt
filling:
5 grated apples
50g walnuts
cinnamon
2 tbsp sugar
Preparation
Bloom the yeast with the sugar and the milk. Mix in the other wet ingredients. Add in the flour and the salt and knead until elastic dough forms. Allow to double in size in a warm place.
Shred the apples and sauté with cinnamon to taste until soft and somewhat drier.
Grind the walnuts in a food processor. Mix with the sugar.
Roll out the dough into a quarter-inch-thick rectangle. Spread one half with apple and sprinkle with the walnut mix. Fold over the empty half. Press down gently and cut into 1-inch-wide strips. Roll them to result in a twisted spiral.
Place each onto a parchment-lined cookie sheet. Preheat oven to 375F, and bake until lightly browned.
