Salmon loaf

Sometimes one doesn't have the energy for pan-fried salmon cakes, but still wants to eat a nice salmon patty. Well, the closes you can come to that is a simple salmon loaf. Canned salmon is perfect in this application, and tangy olives are crucial for the ultimate flavor.

Ingredients

15 oz canned salmon

2 eggs

1.5 cup breadcrumbs

milk

0.5 cup minced olives

0.5 cup minced onions

1 tbsp minced dill

0.25 cup vegetable oil

salt

pepper

Preparation

Flake the salmon and mix with the eggs, oil, olives, onions, and dill. Season with salt and black pepper and fold in the breadcrumbs and enough milk so a moist mix forms.

Pat into a 9-by-5 baking dish. Preheat oven to 350F, and bake for about 40 minutes, until the center is set.

Serve with mashed potatoes, or as a tasty sandwich filling!
