Triple berry breakfast cake

 

In winter one of my go-to breakfasts for the kids is breakfast cakes. Low-sugar, packed with natural fats and oils, carbs, and berries/pumpkin/banana/etc...

This triple berry one, topped with a walnut streusel was an absolute win!

Ingredients

2 cups flour

1/3 cup sugar

2 tsp baking powder

2 eggs

8 tbsp melted butter

1/2 cup milk

2 cups frozen berries

1 tsp vanilla

1 tsp cinnamon

topping:

0.25 cup brown sugar

3 tbsp flour

3 tsp cinnamon

1/3 cup chopped walnuts

3 tbsp melted butter

Preparation

Preheat oven to 375F. Butter a 9-by-9-inch pan. 

Mix the dry ingredients. Add in the wet ingredients and whisk well. Spread out batter into bottom of ban. Sprinkle on frozen berries.

Crumble the streusel together. Sprinkle onto the top. Press down and bake for 30-40 minutes, until the tester inserted in the middle comes out clean.

Cool and serve slightly warm.
