Millet makes an excellent vegan substitute for my favorite Hungarian cottage cheese type cheese product. This dish is a hearty, delicious breakfast meal.
Ingredients
1 cup millet
2 cups milk
zest of a lemon
sugar to taste
0.5 tsp salt
vanilla to taste
lemon juice to taste
Preparation
Soak the millet overnight. Cook in the milk with 3 tbsp sugar and the salt until soft. Blend with an immersion blender and adjust consistency to creamy with more milk. Add lemon zest, 1 tbsp lemon juice, vanilla, and more sugar as desired.
Blend berries with sugar to taste, and thicken with chia seeds. Layer with the millet cream and serve.
