We eat relatively little meat, and I frequently try to substitute tasty vegetarian or vegan options for a meaty meal. A can of chickpeas is always handy to have around, as they can easily be turned into delicious faux-meat patties!
Ingredients
15 oz canned chickpeas
1 small onion
3 cloves garlic
0.75 tsp cumin
0.25 tsp coriander
4 tbsp flour
minced herbs if desired
salt
black pepper
oil
Preparation
Preheat oven to 400F. Line a baking sheet with parchment paper.
In a food processor blend together the ingredients, adding a little oil or breadcrumbs to form a moist paste. Not too liquidy, not too dry.
Take 2-3 tbsp portions and form into even discs. Place onto parchment paper sprayed with oil. Spray tops with oil as well and cook until browned. Cool on cookie racks and serve!
